The nature of the industry is that things are constantly changing, and you have to have the mindset that you will be doing continuous learning.
If the candidate isn't comfortable learning a new language they're likely not interested in keeping up in general.

With Clojure, I can quickly figure out what a library does just by reading the code and trying things in the REPL most of the time.
The fact that this sort of thing isn't expected says a lot about our industry and general software development practices in my opinion.
